I am about to install new gut frets on a baroque replica guitar and wonder why some people install double frets.

Besides being the general historical practice (which surely tells us something) double frets have some real advantages:
- once bedded down the loop closest to the finger takes much of the wear thus leaving the second loop to act as a clean 'nut' for longer
- being a double loop they have greater elasticity along the whole length, thus enabling fret adjustment/movement to take place without the fret becoming so easily loose after only a few such movements as often found with single loops
