Your query about Tempi in the pieces - there are no hard and fast rules. At least one 17th century sources advise players to chose a speed which is comfortable for them. If the texture of the piece is complex then take it at a modest pace. Very generally allemandes are on the slow side, courants fairly brisk, sarabandes very slow and gigues as fast as you can manage.Other pieces it is depends on how difficult they are and how good a player you are. People seem to think there is a "right" or "authentic" answer to these questions but I don't think there is. Individual responses to the music with different. Hope that is helpful.
P.P.S. It is available on Amazon. The full title is Ad hunc modum - Musica ed manuscrits catalan/Sanz/Guerau. Hope that is helpful.
P.S. The 3 pieces from E-Bbc Ms. M73/691/2 and the Xacona from E.Bbc Ms. 3656 in the section of pieces in Italian tablature have been recorded by Alfred Fernandez on the CD "Ad hunc modum" - La Ma de Guido LMG 2044 in 2001. I don't know if it is still available.
